FERTILE FOODS TO BALANCE BLOOD SUGAR: PUMPKIN CRANBERRY BITES

The sweet flavor and high fiber from this snack helps reduce sugar cravings, and these foods are excellent at harnessing the mood swings that typically occur during the 2 week wait. What could be better?
- ½ cup pumpkin puree
- 1/4 cup raw honey
- ¼ cup plus 1 tablespoon flaxseed meal
- 1 tablespoon pumpkin pie spice
- ¼ teaspoon salt
- 1 1/2 cup oats
- 1/2 cup pumpkin seeds
- ½ cup dried cranberries
- In a large bowl, whisk together the pumpkin puree, raw honey, flaxseed meal, pumpkin pie spice, and salt. Using a spatula, stir in the oats, pumpkin seeds and dried cranberries. Make sure to incorporate all ingredients until evenly dispersed and well combined.
- With clean hands, using 1 heaping tablespoon to measure each bite, shape the mixture into small balls, making sure to fully compress the mixture. Repeat until no mixture remains. Place the finished bites onto a sheet tray or on a couple of large plates. Store into the refrigerator for about 20 minutes.
- Remove and serve.
